We love this aromatic delicious Sweet and Sour Red Cabbage. I have cabbage in the garden now, so it was the perfect time to post this recipe. It is wonderful served with pork roast and potato pancakes
6 slices bacon
1/2 c. brown sugar, packed 1/4 c. water 1 tablespoon sweet pickle juice 1/2 c. vinegar 1 dash or two of salt, pepper, nutmeg and cinnamon 1/4 teaspoon ground red pepper (optional) 1/2 teaspoon lemon juice 2 apples sliced 1 medium head red cabbage (I slice thin with a good knife to have a large shredded effect) 1 medium onion sliced Fry bacon in skillet until crisp. Remove bacon and set aside. Pour off all but 2 tablespoons bacon grease. Add cabbage to pan over medium heat and cook cabbage until crisp tender. Add onion and apple slices. This is a super easy salsa recipe made with things we keep in the house almost all the time. My measurements are never exact and are subject to change with the availability of ingredients on hand. This is a wonderful and simple recipe that can be used with any type of berries. I just experiment with the ingredients to create new flavors with what is in season. Also the add ins may be changed to taste, such as using Mulberry or Raspberry liqueur or wine to make it a little fancier for an adult dessert. |
